Avocado egg toast

Sourdough with smashed avocado and a soft-boiled egg.

Ingredients

  • 1 sourdough bread
  • 0.5 ripe avocado
  • 1 large egg
  • 0.5 tsp lemon juice
  • 0.25 tsp chili flakes
  • 0.25 tsp salt

Method

  1. 1Lower the egg into simmering water and cook for 6.5 minutes, then cool under cold water and peel.
  2. 2Toast the sourdough until golden.
  3. 3Mash the avocado with lemon juice and salt, then spread it over the toast.
  4. 4Halve the soft-boiled egg and place it on top.
  5. 5Finish with chili flakes and a pinch of salt.
