Avocado egg toast
Sourdough with smashed avocado and a soft-boiled egg.

Ingredients
- 1 sourdough bread
- 0.5 ripe avocado
- 1 large egg
- 0.5 tsp lemon juice
- 0.25 tsp chili flakes
- 0.25 tsp salt
Method
- 1Lower the egg into simmering water and cook for 6.5 minutes, then cool under cold water and peel.
- 2Toast the sourdough until golden.
- 3Mash the avocado with lemon juice and salt, then spread it over the toast.
- 4Halve the soft-boiled egg and place it on top.
- 5Finish with chili flakes and a pinch of salt.
