Baked cod with potatoes

Cod baked with baby potatoes and green beans.

Ingredients

  • 150 g cod fillet
  • 180 g baby potatoes, halved
  • 80 g green beans
  • 1 tbsp olive oil
  • 0.5 lemon
  • 0.5 tsp dried thyme

Method

  1. 1Heat the oven to 200°C (400°F). Toss the potatoes with olive oil and thyme and roast for 20 minutes.
  2. 2Add the green beans and cod to the tray.
  3. 3Squeeze over the lemon and bake for another 15 minutes.
  4. 4Check the fish flakes easily and serve.
