Beef and vegetable skewers

Grilled beef with peppers and onion over couscous.

Ingredients

  • 130 g lean beef cubes
  • 120 g cooked couscous
  • 60 g red pepper, chunked
  • 50 g red onion, chunked
  • 1 tbsp olive oil
  • 0.5 tsp smoked paprika

Method

  1. 1Toss the beef with olive oil and paprika.
  2. 2Thread the beef, pepper and onion onto skewers.
  3. 3Grill for 3–4 minutes per side until browned and cooked to your liking.
  4. 4Serve the skewers over the couscous.
