Lentil caprese bowl

Green lentils with mozzarella, tomato and basil.

Ingredients

  • 150 g cooked green lentils
  • 50 g fresh mozzarella, diced
  • 70 g cherry tomatoes, halved
  • 4 g fresh basil, torn
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar

Method

  1. 1Combine the lentils, mozzarella and tomatoes in a bowl.
  2. 2Drizzle with olive oil and balsamic vinegar.
  3. 3Toss gently and scatter with basil.
  4. 4Season to taste and serve.
