Caprese pasta salad

Wholewheat pasta with mozzarella, tomato and basil.

Ingredients

  • 80 g wholewheat pasta
  • 60 g fresh mozzarella, diced
  • 80 g cherry tomatoes, halved
  • 5 g fresh basil, torn
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar

Method

  1. 1Cook the pasta in salted water until al dente, then drain and cool under cold water.
  2. 2Transfer to a bowl and add the mozzarella and tomatoes.
  3. 3Drizzle with olive oil and balsamic vinegar.
  4. 4Toss with the torn basil and serve.
