Chicken Caesar bowl

Grilled chicken over romaine with a lighter Caesar dressing.

Ingredients

  • 130 g chicken breast
  • 80 g romaine lettuce, chopped
  • 40 g Greek yogurt
  • 15 g parmesan, grated
  • 1 tsp lemon juice
  • 1 tsp olive oil

Method

  1. 1Season and grill the chicken for 4–5 minutes per side, then slice.
  2. 2Whisk the yogurt, half the parmesan, lemon juice and olive oil into a dressing.
  3. 3Toss the romaine with the dressing.
  4. 4Top with the sliced chicken and remaining parmesan.
