Chicken noodle soup

A comforting broth with chicken, noodles and veg.

Ingredients

  • 120 g chicken breast
  • 60 g egg noodles
  • 50 g carrot, sliced
  • 500 ml chicken stock
  • 20 g spring onion, sliced
  • 1 tsp fresh ginger, grated

Method

  1. 1Bring the stock to a simmer with the ginger and carrot.
  2. 2Add the whole chicken breast and poach for 12 minutes, then remove and shred.
  3. 3Add the noodles to the broth and cook per the packet.
  4. 4Return the chicken, add the spring onion and serve.
