Chicken sweet potato tray bake
One-tray chicken thighs with sweet potato and broccoli.

Ingredients
- 150 g chicken thigh, boneless
- 150 g sweet potato, cubed
- 80 g broccoli florets
- 1 tbsp olive oil
- 0.5 tsp smoked paprika
- 1 garlic, minced
Method
- 1Heat the oven to 200°C (400°F).
- 2Toss the sweet potato with half the oil and roast for 15 minutes.
- 3Rub the chicken with the remaining oil, paprika and garlic.
- 4Add the chicken and broccoli to the tray and bake for 20–22 minutes.
- 5Check the chicken is cooked through and serve.
