Chicken sweet potato tray bake

One-tray chicken thighs with sweet potato and broccoli.

Ingredients

  • 150 g chicken thigh, boneless
  • 150 g sweet potato, cubed
  • 80 g broccoli florets
  • 1 tbsp olive oil
  • 0.5 tsp smoked paprika
  • 1 garlic, minced

Method

  1. 1Heat the oven to 200°C (400°F).
  2. 2Toss the sweet potato with half the oil and roast for 15 minutes.
  3. 3Rub the chicken with the remaining oil, paprika and garlic.
  4. 4Add the chicken and broccoli to the tray and bake for 20–22 minutes.
  5. 5Check the chicken is cooked through and serve.
