Chickpea quinoa salad

Protein-rich quinoa with chickpeas, cucumber and lemon dressing.

Ingredients

  • 120 g cooked quinoa
  • 100 g canned chickpeas, drained
  • 60 g cucumber, diced
  • 60 g cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 0.25 tsp salt

Method

  1. 1In a large bowl, combine the cooked quinoa and chickpeas.
  2. 2Add the diced cucumber and halved tomatoes.
  3. 3Whisk the olive oil, lemon juice and salt, then pour over the salad.
  4. 4Toss well and serve at room temperature or chilled.
