Chickpea quinoa salad
Protein-rich quinoa with chickpeas, cucumber and lemon dressing.

Ingredients
- 120 g cooked quinoa
- 100 g canned chickpeas, drained
- 60 g cucumber, diced
- 60 g cherry tomatoes, halved
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 0.25 tsp salt
Method
- 1In a large bowl, combine the cooked quinoa and chickpeas.
- 2Add the diced cucumber and halved tomatoes.
- 3Whisk the olive oil, lemon juice and salt, then pour over the salad.
- 4Toss well and serve at room temperature or chilled.
