Cobb salad

Chicken, egg and avocado over crisp leaves.

Ingredients

  • 100 g chicken breast
  • 1 large egg, boiled
  • 0.5 avocado, diced
  • 60 g cherry tomatoes, halved
  • 60 g mixed salad leaves
  • 1 tbsp olive oil
  • 1 tsp red wine vinegar

Method

  1. 1Grill the chicken until cooked through, then slice.
  2. 2Arrange the salad leaves on a plate.
  3. 3Top with rows of chicken, quartered egg, avocado and tomatoes.
  4. 4Whisk the olive oil and vinegar and drizzle over the salad.
