Veggie egg fried rice

Quick fried rice with egg, peas and spring onion.

Ingredients

  • 150 g cooked cold rice
  • 2 large eggs
  • 50 g frozen peas
  • 20 g spring onion, sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

Method

  1. 1Heat the sesame oil in a wok or large pan over high heat.
  2. 2Push in the beaten eggs and scramble quickly, then set aside.
  3. 3Add the cold rice and peas and stir-fry for 3–4 minutes.
  4. 4Return the egg, add soy sauce and spring onion, toss and serve.
