Veggie egg fried rice
Quick fried rice with egg, peas and spring onion.

Ingredients
- 150 g cooked cold rice
- 2 large eggs
- 50 g frozen peas
- 20 g spring onion, sliced
- 1 tbsp soy sauce
- 1 tsp sesame oil
Method
- 1Heat the sesame oil in a wok or large pan over high heat.
- 2Push in the beaten eggs and scramble quickly, then set aside.
- 3Add the cold rice and peas and stir-fry for 3–4 minutes.
- 4Return the egg, add soy sauce and spring onion, toss and serve.
