Halloumi vegetable traybake
Roasted Mediterranean veg with halloumi.

Ingredients
- 90 g halloumi, cubed
- 80 g courgette, chunked
- 70 g red pepper, chunked
- 50 g red onion, chunked
- 60 g cherry tomatoes
- 1 tbsp olive oil
- 0.5 tsp dried oregano
Method
- 1Heat the oven to 200°C (400°F).
- 2Toss the vegetables with olive oil and oregano on a tray and roast for 20 minutes.
- 3Add the halloumi cubes and roast for 10 more minutes until golden.
- 4Serve hot, on its own or with couscous.
