Baked avocado eggs

Avocado halves baked with an egg in each — low carb.

Ingredients

  • 1 ripe avocado
  • 2 small eggs
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh chives, chopped

Method

  1. 1Heat the oven to 200°C (400°F).
  2. 2Halve the avocado and remove the stone, scooping a little extra flesh to widen the hollow.
  3. 3Set the halves in a small dish so they sit level.
  4. 4Crack an egg into each hollow, season with salt and pepper.
  5. 5Bake for 12–15 minutes until the whites are set, then scatter with chives.
