Baked avocado eggs
Avocado halves baked with an egg in each — low carb.

Ingredients
- 1 ripe avocado
- 2 small eggs
- 0.25 tsp salt
- 0.25 tsp black pepper
- 1 tbsp fresh chives, chopped
Method
- 1Heat the oven to 200°C (400°F).
- 2Halve the avocado and remove the stone, scooping a little extra flesh to widen the hollow.
- 3Set the halves in a small dish so they sit level.
- 4Crack an egg into each hollow, season with salt and pepper.
- 5Bake for 12–15 minutes until the whites are set, then scatter with chives.
