Keto veggie frittata
Baked eggs with courgette, pepper and cheddar — low carb.

Ingredients
- 3 large eggs
- 60 g courgette, diced
- 40 g red pepper, diced
- 30 g cheddar, grated
- 1 tsp olive oil
- 0.25 tsp salt
Method
- 1Heat the oven to 190°C (375°F).
- 2Warm the olive oil in an oven-safe pan and soften the courgette and pepper for 3 minutes.
- 3Whisk the eggs with salt and pour over the vegetables.
- 4Scatter the cheddar on top and cook for 1 minute on the stove.
- 5Transfer to the oven and bake for 12–14 minutes until set and golden.
