Keto veggie frittata

Baked eggs with courgette, pepper and cheddar — low carb.

Ingredients

  • 3 large eggs
  • 60 g courgette, diced
  • 40 g red pepper, diced
  • 30 g cheddar, grated
  • 1 tsp olive oil
  • 0.25 tsp salt

Method

  1. 1Heat the oven to 190°C (375°F).
  2. 2Warm the olive oil in an oven-safe pan and soften the courgette and pepper for 3 minutes.
  3. 3Whisk the eggs with salt and pour over the vegetables.
  4. 4Scatter the cheddar on top and cook for 1 minute on the stove.
  5. 5Transfer to the oven and bake for 12–14 minutes until set and golden.
