Minestrone soup
Vegetable and bean soup with small pasta.

Ingredients
- 100 g canned mixed beans, drained
- 40 g small pasta
- 50 g carrot, diced
- 40 g celery, diced
- 150 g canned chopped tomatoes
- 400 ml vegetable stock
- 1 tsp olive oil
Method
- 1Heat the olive oil and soften the carrot and celery for 4 minutes.
- 2Add the tomatoes and stock and bring to a boil.
- 3Stir in the pasta and beans and simmer for 10–12 minutes until the pasta is cooked.
- 4Season to taste and serve hot.
