Minestrone soup

Vegetable and bean soup with small pasta.

Ingredients

  • 100 g canned mixed beans, drained
  • 40 g small pasta
  • 50 g carrot, diced
  • 40 g celery, diced
  • 150 g canned chopped tomatoes
  • 400 ml vegetable stock
  • 1 tsp olive oil

Method

  1. 1Heat the olive oil and soften the carrot and celery for 4 minutes.
  2. 2Add the tomatoes and stock and bring to a boil.
  3. 3Stir in the pasta and beans and simmer for 10–12 minutes until the pasta is cooked.
  4. 4Season to taste and serve hot.
