Prawn rice noodle salad

Cold rice noodles with prawns, veg and lime dressing.

Ingredients

  • 70 g rice noodles
  • 100 g cooked prawns
  • 40 g carrot, julienned
  • 40 g cucumber, julienned
  • 1 tbsp lime juice
  • 1 tsp fish sauce
  • 1 tsp honey

Method

  1. 1Soak or cook the rice noodles per the packet, then rinse under cold water.
  2. 2Whisk the lime juice, fish sauce and honey into a dressing.
  3. 3Toss the noodles with the carrot, cucumber and prawns.
  4. 4Pour over the dressing, toss again and serve cold.
