Prawn rice noodle salad
Cold rice noodles with prawns, veg and lime dressing.

Ingredients
- 70 g rice noodles
- 100 g cooked prawns
- 40 g carrot, julienned
- 40 g cucumber, julienned
- 1 tbsp lime juice
- 1 tsp fish sauce
- 1 tsp honey
Method
- 1Soak or cook the rice noodles per the packet, then rinse under cold water.
- 2Whisk the lime juice, fish sauce and honey into a dressing.
- 3Toss the noodles with the carrot, cucumber and prawns.
- 4Pour over the dressing, toss again and serve cold.
