One-pan shakshuka

Eggs poached in a spiced tomato and pepper sauce.

Ingredients

  • 2 large eggs
  • 200 g canned chopped tomatoes
  • 60 g red pepper, diced
  • 40 g onion, diced
  • 0.5 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 1 tsp olive oil

Method

  1. 1Heat the olive oil in a small pan and soften the onion and pepper for 4 minutes.
  2. 2Stir in the cumin and paprika and cook for 30 seconds until fragrant.
  3. 3Pour in the tomatoes and simmer for 6–8 minutes until slightly thickened.
  4. 4Make two wells in the sauce and crack an egg into each.
  5. 5Cover and cook for 5–6 minutes until the whites set but the yolks stay soft.
