One-pan shakshuka
Eggs poached in a spiced tomato and pepper sauce.

Ingredients
- 2 large eggs
- 200 g canned chopped tomatoes
- 60 g red pepper, diced
- 40 g onion, diced
- 0.5 tsp ground cumin
- 0.5 tsp smoked paprika
- 1 tsp olive oil
Method
- 1Heat the olive oil in a small pan and soften the onion and pepper for 4 minutes.
- 2Stir in the cumin and paprika and cook for 30 seconds until fragrant.
- 3Pour in the tomatoes and simmer for 6–8 minutes until slightly thickened.
- 4Make two wells in the sauce and crack an egg into each.
- 5Cover and cook for 5–6 minutes until the whites set but the yolks stay soft.
