Lentil shepherd's pie

Lentil and veg base topped with mashed potato.

Ingredients

  • 130 g cooked green lentils
  • 200 g potato, cubed
  • 50 g carrot, diced
  • 40 g onion, diced
  • 100 g canned chopped tomatoes
  • 1 tbsp olive oil

Method

  1. 1Boil the potato until soft, then mash with a little olive oil.
  2. 2Sauté the onion and carrot for 5 minutes, then add the lentils and tomatoes.
  3. 3Simmer the lentil mix for 8 minutes and season.
  4. 4Spread it in a dish, top with the mash and bake at 200°C (400°F) for 20 minutes.
