Lentil shepherd's pie
Lentil and veg base topped with mashed potato.

Ingredients
- 130 g cooked green lentils
- 200 g potato, cubed
- 50 g carrot, diced
- 40 g onion, diced
- 100 g canned chopped tomatoes
- 1 tbsp olive oil
Method
- 1Boil the potato until soft, then mash with a little olive oil.
- 2Sauté the onion and carrot for 5 minutes, then add the lentils and tomatoes.
- 3Simmer the lentil mix for 8 minutes and season.
- 4Spread it in a dish, top with the mash and bake at 200°C (400°F) for 20 minutes.
