Shrimp avocado salad
Chilled prawns with avocado, greens and lime.

Ingredients
- 120 g cooked prawns
- 0.5 avocado, diced
- 50 g mixed salad leaves
- 50 g cherry tomatoes, halved
- 1 tbsp lime juice
- 1 tsp olive oil
Method
- 1Arrange the salad leaves on a plate.
- 2Top with the prawns, avocado and tomatoes.
- 3Whisk the lime juice and olive oil and drizzle over.
- 4Season lightly and serve chilled.
