Shrimp avocado salad

Chilled prawns with avocado, greens and lime.

Ingredients

  • 120 g cooked prawns
  • 0.5 avocado, diced
  • 50 g mixed salad leaves
  • 50 g cherry tomatoes, halved
  • 1 tbsp lime juice
  • 1 tsp olive oil

Method

  1. 1Arrange the salad leaves on a plate.
  2. 2Top with the prawns, avocado and tomatoes.
  3. 3Whisk the lime juice and olive oil and drizzle over.
  4. 4Season lightly and serve chilled.
