Smoked salmon scramble
Soft scrambled eggs folded with smoked salmon and chives.

Ingredients
- 2 large eggs
- 40 g smoked salmon
- 5 g butter
- 1 tbsp fresh chives, chopped
- 0.25 tsp black pepper
Method
- 1Whisk the eggs lightly with the black pepper.
- 2Melt the butter in a non-stick pan over low heat.
- 3Add the eggs and stir slowly and continuously until just set but still soft.
- 4Take off the heat and fold through torn smoked salmon.
- 5Scatter with chives and serve on its own or with toast.
