Smoked salmon scramble

Soft scrambled eggs folded with smoked salmon and chives.

Ingredients

  • 2 large eggs
  • 40 g smoked salmon
  • 5 g butter
  • 1 tbsp fresh chives, chopped
  • 0.25 tsp black pepper

Method

  1. 1Whisk the eggs lightly with the black pepper.
  2. 2Melt the butter in a non-stick pan over low heat.
  3. 3Add the eggs and stir slowly and continuously until just set but still soft.
  4. 4Take off the heat and fold through torn smoked salmon.
  5. 5Scatter with chives and serve on its own or with toast.
