Spinach & feta omelette
A fluffy two-egg omelette folded around wilted spinach and feta.

Ingredients
- 2 large eggs
- 40 g baby spinach
- 30 g feta, crumbled
- 1 tsp olive oil
- 0.25 tsp salt
- 0.25 tsp black pepper
Method
- 1Whisk the eggs with the salt and pepper until smooth.
- 2Heat the olive oil in a non-stick pan over medium heat and wilt the spinach for 1 minute, then set aside.
- 3Pour the eggs into the pan and swirl to cover the base.
- 4When the edges set, scatter the spinach and feta over one half.
- 5Fold the omelette over the filling, cook for another 30 seconds and slide onto a plate.
