Spinach & feta omelette

A fluffy two-egg omelette folded around wilted spinach and feta.

Ingredients

  • 2 large eggs
  • 40 g baby spinach
  • 30 g feta, crumbled
  • 1 tsp olive oil
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method

  1. 1Whisk the eggs with the salt and pepper until smooth.
  2. 2Heat the olive oil in a non-stick pan over medium heat and wilt the spinach for 1 minute, then set aside.
  3. 3Pour the eggs into the pan and swirl to cover the base.
  4. 4When the edges set, scatter the spinach and feta over one half.
  5. 5Fold the omelette over the filling, cook for another 30 seconds and slide onto a plate.
