Quinoa stuffed peppers

Peppers baked with a quinoa, bean and corn filling.

Ingredients

  • 2 large bell peppers
  • 100 g cooked quinoa
  • 80 g canned black beans, drained
  • 50 g sweetcorn
  • 40 g salsa
  • 1 tsp olive oil

Method

  1. 1Heat the oven to 190°C (375°F). Halve the peppers and remove the seeds.
  2. 2Mix the quinoa, beans, corn and salsa.
  3. 3Spoon the filling into the pepper halves and drizzle with olive oil.
  4. 4Bake for 25–30 minutes until the peppers are tender.
