Quinoa stuffed peppers
Peppers baked with a quinoa, bean and corn filling.

Ingredients
- 2 large bell peppers
- 100 g cooked quinoa
- 80 g canned black beans, drained
- 50 g sweetcorn
- 40 g salsa
- 1 tsp olive oil
Method
- 1Heat the oven to 190°C (375°F). Halve the peppers and remove the seeds.
- 2Mix the quinoa, beans, corn and salsa.
- 3Spoon the filling into the pepper halves and drizzle with olive oil.
- 4Bake for 25–30 minutes until the peppers are tender.
