Stuffed sweet potato

Baked sweet potato loaded with beans and salsa.

Ingredients

  • 250 g sweet potato
  • 100 g canned black beans, drained
  • 40 g salsa
  • 0.25 avocado, sliced
  • 1 tsp olive oil

Method

  1. 1Heat the oven to 200°C (400°F). Prick the sweet potato and bake for 40 minutes until soft.
  2. 2Warm the black beans with a little olive oil.
  3. 3Split the sweet potato open and fluff the flesh.
  4. 4Fill with the beans, salsa and avocado.
