Stuffed sweet potato
Baked sweet potato loaded with beans and salsa.

Ingredients
- 250 g sweet potato
- 100 g canned black beans, drained
- 40 g salsa
- 0.25 avocado, sliced
- 1 tsp olive oil
Method
- 1Heat the oven to 200°C (400°F). Prick the sweet potato and bake for 40 minutes until soft.
- 2Warm the black beans with a little olive oil.
- 3Split the sweet potato open and fluff the flesh.
- 4Fill with the beans, salsa and avocado.
