Tofu scramble wrap

Spiced turmeric tofu scramble in a warm tortilla.

Ingredients

  • 120 g firm tofu, crumbled
  • 1 large tortilla
  • 0.5 tsp ground turmeric
  • 30 g baby spinach
  • 1 tsp olive oil
  • 0.25 tsp salt

Method

  1. 1Heat the olive oil in a pan over medium heat.
  2. 2Add the crumbled tofu, turmeric and salt and cook for 4–5 minutes, stirring.
  3. 3Add the spinach and cook until just wilted.
  4. 4Warm the tortilla for a few seconds in a dry pan.
  5. 5Spoon the scramble down the middle, fold in the sides and roll up tightly.
