Tofu scramble wrap
Spiced turmeric tofu scramble in a warm tortilla.

Ingredients
- 120 g firm tofu, crumbled
- 1 large tortilla
- 0.5 tsp ground turmeric
- 30 g baby spinach
- 1 tsp olive oil
- 0.25 tsp salt
Method
- 1Heat the olive oil in a pan over medium heat.
- 2Add the crumbled tofu, turmeric and salt and cook for 4–5 minutes, stirring.
- 3Add the spinach and cook until just wilted.
- 4Warm the tortilla for a few seconds in a dry pan.
- 5Spoon the scramble down the middle, fold in the sides and roll up tightly.
