Turkey meatballs with courgette
Baked turkey meatballs over sautéed courgette ribbons.

Ingredients
- 130 g turkey mince
- 150 g courgette
- 0.5 egg
- 15 g breadcrumbs
- 150 g canned chopped tomatoes
- 1 tbsp olive oil
- 1 garlic, minced
Method
- 1Heat the oven to 200°C (400°F).
- 2Mix the turkey, egg and breadcrumbs, shape into small balls and bake for 18 minutes.
- 3Simmer the tomatoes with garlic for 8 minutes to make a quick sauce.
- 4Peel the courgette into ribbons and sauté in olive oil for 3 minutes.
- 5Serve the meatballs and sauce over the courgette.
