Turkey meatballs with courgette

Baked turkey meatballs over sautéed courgette ribbons.

Ingredients

  • 130 g turkey mince
  • 150 g courgette
  • 0.5 egg
  • 15 g breadcrumbs
  • 150 g canned chopped tomatoes
  • 1 tbsp olive oil
  • 1 garlic, minced

Method

  1. 1Heat the oven to 200°C (400°F).
  2. 2Mix the turkey, egg and breadcrumbs, shape into small balls and bake for 18 minutes.
  3. 3Simmer the tomatoes with garlic for 8 minutes to make a quick sauce.
  4. 4Peel the courgette into ribbons and sauté in olive oil for 3 minutes.
  5. 5Serve the meatballs and sauce over the courgette.
