Three-bean veggie chili
A hearty bean chili with peppers and spices.

Ingredients
- 150 g canned mixed beans, drained
- 200 g canned chopped tomatoes
- 60 g bell pepper, diced
- 50 g onion, diced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tbsp olive oil
Method
- 1Heat the olive oil and soften the onion and pepper for 5 minutes.
- 2Stir in the cumin and chili powder and cook for 30 seconds.
- 3Add the beans and tomatoes and simmer for 20 minutes.
- 4Season to taste and serve — good on its own or with rice.
