Three-bean veggie chili

A hearty bean chili with peppers and spices.

Ingredients

  • 150 g canned mixed beans, drained
  • 200 g canned chopped tomatoes
  • 60 g bell pepper, diced
  • 50 g onion, diced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tbsp olive oil

Method

  1. 1Heat the olive oil and soften the onion and pepper for 5 minutes.
  2. 2Stir in the cumin and chili powder and cook for 30 seconds.
  3. 3Add the beans and tomatoes and simmer for 20 minutes.
  4. 4Season to taste and serve — good on its own or with rice.
