Fermented foods and the microbiome
Over 17 weeks a diet high in fermented foods — yogurt, kefir, kimchi, brined vegetables — steadily increased gut microbiota diversity and lowered inflammatory markers. The high-fibre arm did not increase diversity. The result is notable because it cuts against expectation: fibre alone did not raise diversity here.
