Iron absorption across diets
Whole-diet iron bioavailability is estimated at 14–18% for mixed diets and 5–12% for vegetarian diets, in people with no iron stores. The gap comes from the form of iron and from compounds that affect absorption. Deficiency is settled by lab work with a doctor, not by guesswork.
