Zinc and phytates in grains
Phytates in grains and legumes markedly reduce zinc absorption from composite meals. At the same time, a review of trace-mineral bioavailability on vegetarian diets notes that adverse effects from lower iron and zinc absorption have not been demonstrated with varied diets in developed countries.
